I'd like to use the default Mac Pro SATA cables (the ones that are built into the power+data plugs). There are 4 of them that are fuzed into one plug, and I was wondering if there's a converter for that plug to diffuse them, or if I have to splice all 4 cables individually in order to make use of the standard plugs.

The only way you could use the original Mac Pro connector without cutting it is to have an internal PCIe x4, x8, or x16 SAS card (read: lots of money) with mini-SAS connector. I looked all over for an adapter and they just don't make a cable with a female mini-SAS connector. You are better off just splicing regular sata cables on them like everyone else here.

Good call Shaanky, I'll refer people to you the next time someone asks. I'm kind of glad I only needed two as I went full ATX and couldn't use the other two. I had made all four, but found out afterward that I couldn't use two. One stopped working correctly (i/o errors in windows), so I took one of the others that I wasn't using and replaced it. The wires are pretty small and it's hard to make the cables still durable after soldering. If Shaanky does a better job than I did, I highly recommend sending your cables to him.

I'm not too worried, and england is too far to send the cables (located in USA). I just ordered 4 brand new SATA cables from newegg.com, and practiced splicing 3 old red SATA cables that I didn't want to use in the case. So far I have about 12 rounds of practice in, and will probably do the real thing when my heat shrink tubing gets here tomorrow.
